SOURDOUGH BANGGALI LOAF


Hi, let me share this beautiful banggali loaf recipe. Which i'm a  bread maker so i plug and play with my discard levine to make this loaf. This recipe is used for 5 loaf. After mixing you will get around 1200gm of dough. And divide to 5 loaf. Almost 24hours to make it.🤣


We start with the starter 1st


Starter 


100gm discard levine

100gm bread flour

50gm tap water 

2 table spoons milk powder

40gm sugar


How to do it :-


Mix well all this and let is rest for 6-8hours. Normally i mix it before i sleep. Next morning i can use the starter


Water roux


50gm bread flour 

150ml water


The way to do it:-


Mix water and flour. Cook with slow heat. 

Stir and Cook  for 7-10 minutes. Let cool before use


Bread


1kg bread flour

140gm sugar 

1 nos egg

2 table spoon milk powder

1 teaspoon salt

120gm butter

450gm water

Whole starter

Whole water roux


Mix all ingredients except butter  till dough comes together.


Add in butter and knead till pass window pane test.

Put in the bread pan or mold. Let it rest for 6-8 hours depending on the weather.


I'm using big mixer it easier for me. As you guys also can use bread maker
